In fact, liquid ice is a mixture of very small crystals of 'ordinary' ice with saltwater, which, as is known, has a lower freezing point. It is produced by special ice generators, which are fairly compact and high-performance units that also consume very little energy.
These devices can be seen, for example, at many fish processing plants, where they are used to keep fresh fish with all its characteristics intact even twenty days after being removed from its natural habitat. If it is frozen, the tissue structure will inevitably be damaged, but if it is filled with liquid ice, it not only cools it to a temperature at which various bacteria either die or stop their active activity, but also envelops the product from all sides, preventing atmospheric air from penetrating. Since liquid ice generators produce a substance in which solid crystals are no larger than 0.01 millimeters, mechanical damage to the cooled product is virtually eliminated.
A modern ice generator is a fairly common type of refrigeration equipment used in large trade and public catering enterprises. With the help of these devices (or more precisely, with the help of the liquid ice they produce), it is possible to store various semi-finished products for a long period of time, and to do so in such a way that even after several days they will have exactly the same properties as freshly prepared ones.
Refrigeration technological equipment for producing liquid ice is also successfully used for producing artificial snow. Moreover, such snow that in its parameters is practically indistinguishable from real snow. Therefore, in recent years, it has increasingly become part of the technical equipment of indoor ski slopes, where fans of this sport can ski all year round.
