The capital's food delivery market began to take shape in the mid-1990s. At that time, pizza delivery companies appeared in Moscow. Products were mainly produced in underground conditions, and drivers with personal vehicles were invited to deliver them to customers.
Gradually, large companies with clear standards and specifics began to enter the market. In 1998, the world's largest pizza delivery chain, Domino's Pizza, opened its first franchise restaurant in Russia. Today, it operates 10 delivery restaurants in the capital region, and plans to expand the network in Moscow to 40 locations. The dough and ingredients for Domino's Pizza are produced at a factory kitchen (800 sq. m) in Khimki. After that, the products are delivered to the points, where they are used to prepare pizza according to orders. The restaurants have a computer database of customers, their own phone number, and an operator number who takes orders.
The main focus of pizzerias is the sale of pizzas for takeaway and delivery. When ordering pizza for takeaway at Domino's Pizza, there is a self-service system, meaning the customer sees the entire pizza preparation process. The delivery area where the chain operates is determined by the delivery time, which is within 10 minutes' drive from the restaurant. The total delivery time from the moment the customer calls does not exceed 30 minutes. A Domino's Pizza driver does not leave with more than two orders.
Also in Russia, the company Papa John's operates under a franchise agreement. Papa John's delivers within 15 minutes' drive from the point. Papa John's, like Domino's Pizza, operates in small premises; on average, the points in Konkovo and Kantemirovskaya have 25 and 15 seats, although the restaurant on Kutuzovsky Prospekt has 150 seats. Customers wishing to order pizza call directly to the restaurant, which allows the operator to process the order in more detail, as they are at the production site.
«PIZZA Factory», founded in 2000, is the largest Russian pizza delivery company. It covers 70% of Moscow's territory for delivery. Delivery is determined by a time of 30 minutes. The pizzeria chain has a call center where all customer calls are received. The products are manufactured at its own production base located near the Third Transport Ring, and its products are delivered to 22 cafes in the capital's districts.
There are pizza delivery companies that are not limited by time: they are ready to deliver pizza throughout Moscow. The delivery time often reaches one and a half to two hours. This is how the company «Transpizza» works, which currently has six pizzerias in Moscow. «Transpizza» operates on its own production base, where they produce 20 types of pizza, nine types of salads, and six types of desserts.
